Cream of Tomato Soup – Vegan


Approx 12 – 15 tomatos
3 Cooking Onions
6 Cloves of Garlic
1 Cup of (raw) Cashews [soaked over night, boiled, and soaked for approx hour – drain]
Or Modify by using Cashew nut butter 3/4 Cup pureed with 1 Cups of water
4 tbsp of Coconut Oil – Divided
1/4 Tsp Of Thyme
1/2 Tsp of dried oregano
3 Tbsp Tomato Paste (from Jar or BPA free can)
3 Bay Leaves
Sea Salt to Taste
Crushed Black Pepper

Wash Tomatoes and slice into quarters.


Preheat over 325 degrees. In a dutch over places tomato skins side up evenly throughout the pot, add garlic, salt, pepper, thyme, oregano, and drizzle with coconut oil. Bake uncovered for approx 2 – 3 hours, mindful to check on them.

When they look like this, and the garlic is nice and soft remove from over. Allow to cool.

In a separate pot, sauteed onions with remaining coconut oil and allow to caramelize until a deep golden brown. Add tomato paste and stir until the paste and onions reach golden caramelized consistency, about 2 or 3 minutes. Remove the paste from the bottom of the pot, add approx 3 cups of water and mix well. Add bay leaf and any remaining spices to taste. Once it reaches a boil transfer to dutch oven.

Remove any skins, bring to a slow simmer and leave for 15 minutes. Remove bay leaf.

Blend cashews with water until a creamy/milky texture has been achieved.

With hand mixer, puree tomato soup.

After the soup has reached an even consistency whisk in cashew cream.

Can top with basil, or parsley for added YUM.
