Preheat over 325 degrees. In a dutch over places tomato skins side up evenly throughout the pot, add garlic, salt, pepper, thyme, oregano, and drizzle with coconut oil. Bake uncovered for approx 2 – 3 hours, mindful to check on them.

When they look like this, and the garlic is nice and soft remove from over. Allow to cool.

In a separate pot, sauteed onions with remaining coconut oil and allow to caramelize until a deep golden brown. Add tomato paste and stir until the paste and onions reach golden caramelized consistency, about 2 or 3 minutes. Remove the paste from the bottom of the pot, add approx 3 cups of water and mix well. Add bay leaf and any remaining spices to taste. Once it reaches a boil transfer to dutch oven.

Remove any skins, bring to a slow simmer and leave for 15 minutes. Remove bay leaf.

Blend cashews with water until a creamy/milky texture has been achieved.

With hand mixer, puree tomato soup.

After the soup has reached an even consistency whisk in cashew cream.

Can top with basil, or parsley for added YUM.

Enjoy!

“whenever we cook for others, we are making a statement to them. If what we prepare and present to our family and friends is attractive, tasty, and health-supporting, we are saying that we want them to be well and happy, to feel nurtured and strengthened. When we offer cuisine that is made of whole and natural ingredients, we are saying that we want them to have all the energy they need in order to make every aspect of their lives richer. We are saying that we honor them” — John Robbins, In May All Be Fed
