Warm Quinoa and Zucchini Bowl

Quinoa (Keen-Wah) I can’t get enough of it! They should have names this lovely seed QuinWow! naturally perfect and complete. 🙂 My favorite source of protein, fibre and vitamins and minerals. I’m a Quinoa Cheerleader and a lot of you have asked me to blog more of my recipes on it, so here’s a great one I love to prepare for lunch. Its so tasty and satisfying.

( makes about 2 servings)

1 cup of quinoa
1 Small Red Onionn – finely diced
1 Zucchini – Mandolin Sliced
2 Garlic Cloves – finely minced
1 tbsp of EVVO
1 Handful of Basil
Sea Salt and Pepper to taste


Rinse quinoa in cold water, heat .5 tbsp of EVVO in pot and lightly stir half of the onion and garlic, a pinch of salt and pepper add quinoa and 2 cups of water. Bring to boil over medium heat, reduce to a simmer and cover with life. Cook until all the water has been absorbed. Check in on it periodically. Remove from heat when done, fluff with fork and return lid.

In a separate pan lightly sauté remaining onion, garlic, and zucchini season with salt and pepper, toss in half of the basil and cook until zucchini is slightly tender.

Mix together in a big bowl, add remaining basil and serve warm!
