Not Yo’Mamma’s Brussel Sprouts

I used to hate eating brussel sprouts growing up. I remember my mother boiling these suckers, and serving them blanched with nothing but a bit of salt or butter. BLEH! To be quite honest I didn’t believe there was a way to make these amazing nutritional powerhouses tasty. Of course, as time went on, and tons of culinary dishes later I’ve mastered the art of yummifying brussels! Every single client I serve these to always preface the attempt to eating the dish by “oh gosh, I hate brussel sprouts”, but then they walk away a lover of them 🙂

Brussel Sprouts
1 Tbsp Coconut Oil
3 Cloves of Garlic minced
Ginger – bout the same amount as garlic minced
Sea Salt and Pepper to taste

1. Trim ends of brussel sprouts and cut into halves, wash well
2.  Heat coconut oil in pan and toss in garlic and ginger, allow to cook for 1 minute
3. Place BS cut side down on top of oil/garlic/ginger and sear for about 1 – 2 minutes
4. Flip when browned nicely on side facing down and repeat step 3
5. Mix around until cooked al dente
6. Season with Sea Salt and Pepper
7. Toss in seeds or nuts of your choice (optional)
8. Serve alone, or pair with protein options of your choice and enjoy 🙂
